- 1 cup of vegetable broth
- 1/2 cup of white wine
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onions and garlic and cook until softened, about 5 minutes. Then Add the cauliflower and mushrooms and cook for an additional 5 minutes. Add the vegetable broth and white wine and bring to a boil. Reduce the heat to low and simmer for 20 minutes, or until the cauliflower is very tender.
