There are all sorts of donuts out there. Some are filled with jelly or cream, while others are glazed or simply dusted with sugar. But there’s one type of donuts that’s especially dear to my heart: the cruller.
Crullers are made from a dough that’s twisted and fried, resulting in a donut that’s light and airy with a crisp exterior. And while they can be flavored with all sorts of things, I think they’re best when left unadorned.
Sure, you can get crullers at most donut shops. But in my opinion, the best crullers are the ones that are homemade. And that’s why I’m sharing my recipe for homemade crullers with you today.
To make the dough, you’ll need:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 eggs
- 1/4 cup sugar
- 1 teaspoon vanilla extract
Start by whisking together the flour, baking powder, and salt in a large bowl. In a separate bowl, whisk together the milk, oil, eggs, sugar, and vanilla. Add the wet ingredients to the dry ingredients and mix until everything is well combined.
The dough will be sticky, so don’t be tempted to add more flour. Just cover the bowl with a damp towel and let the dough rest for 30 minutes.
While the dough is resting, heat about 2 inches of oil in a large pot or Dutch oven over medium heat. You’ll know the oil is ready when it reaches 350 degrees F on a candy thermometer.
When the oil is hot and the dough has rested, it’s time to start frying. To do this, you’ll need to work in batches. So, start by scooping out a heaping tablespoon of dough and then gently shaping it into a log. Carefully lower the log into the hot oil and fry it for 2 to 3 minutes, until it’s golden brown.
Remove the cruller from the oil with a slotted spoon and drain it on a paper towel-lined plate. Repeat with the remaining dough.
Once all of the crullers have been fried, let them cool for a few minutes before serving. Serve them plain or with your favorite dipping sauce. Enjoy!
